Recognizing genuine extra virgin olive oil requires a few simple steps: reading the label correctly and learning to use your eyes, nose, and palate.<\/p>\n<h2>Why it\u2019s not enough to just read \u201cextra virgin\u201d on the label<\/h2>\n<p>\u201c<strong>Extra virgin olive oil<\/strong>\u201d is a legally defined category based on chemical parameters, the most important being a maximum acidity of 0.8%. However, this says nothing about the freshness, the true origin of the olives, or the presence of minor defects that, while still within legal limits, make one oil inferior to another.
