The Grilled Artichokes Oro del Salento are born from a careful and respectful artisanal processing of the raw material, designed to enhance the authentic flavor of the Violet artichoke, one of the most appreciated varieties in the Mediterranean. For this specialty, we use only the heart of the artichoke, the sweetest, softest, and most prized part, manually selected to ensure quality and uniformity.
After thorough cleaning, the artichokes are slowly grilled, a fundamental phase that gives the product its characteristic roasted aroma and a soft yet firm texture. Grilling allows the natural taste of the artichoke to shine without overshadowing it, preserving its vegetal and slightly bitter notes, typical of this variety.
Once ready, the artichokes are preserved in glass jars with fresh extra virgin olive oil from our production, without the addition of preservatives or artificial additives. The extra virgin oil, chosen for its fragrance and delicacy, envelops the artichokes, enhancing their flavor and ensuring natural preservation. To complete the recipe, a balanced mix of Mediterranean spices, including oregano and black pepper, adds an intense aroma and a pleasant aromatic note.
The color of the artichokes can vary from straw yellow to yellowish green, a sign of artisanal processing and a genuine, non-standardized product. On the palate, they are soft, enveloping, and rich in flavor, perfect to be served as an appetizer, on bruschetta, in gourmet salads, as a side dish, or to enrich meat, fish, and pasta dishes.
