Oro del Salento was born in Ugento, in the heart of Salento, in February 2008 from the passion of the Paiano family for their land and for an agricultural tradition passed down from generation to generation.

The company takes its name from the most precious good that this land produces: extra virgin olive oil. The centuries-old olive groves of the Casciani estate, owned by the Paiano family, produce two oils with distinct characteristics:

• Paiano Extra Virgin Olive Oil™ — a direct expression of the family’s historic olive trees
• Casciani Extra Virgin Olive Oil — from the estate of the same name, with an aromatic profile characteristic of the Ugento territory

Alongside the oil, over the years we have developed a selection of artisanal preserves that tell the story of authentic Salento cuisine: brined and oil-preserved olives with traditional fillings, oil-preserved vegetables, pâté, and seasonings based on our oils. Each product is handmade, without preservatives or artificial additives.

We cater to those who choose food consciously — those who read labels, who want to know where what they bring to the table comes from, who seek the authentic taste of a specific land. We do not produce for large distribution: we sell directly, to ensure freshness and complete traceability from the field to your kitchen.

Over 15 years of activity have taught us that quality is not improvised: it is built slowly, with care for the olive trees, respect for the rhythms of nature, and honesty towards those who choose our products.
