In our company, the desire to experiment is certainly not lacking; of the over 80 products we have in our catalog, there are some unique and special ones that we love to let people taste when they visit us at the various markets organized with Coldiretti and Campagna amica. (an organization that provides assistance to agritourism businesses, recognized by the Ministry of the Environment as an environmental association.)
The uniqueness lies in understanding whether a “marriage” can work or not, like for the almond-stuffed olives, bay leaf olives, and other products available in the online catalog. A marriage that we define as a success is the “Dried Tomato and Ricotta Forte Pesto”
Dried Tomato and Pugliese Ricotta Forte Pesto: A Winning Marriage
Made with the right proportions of dried tomatoes, ricotta forte, pine nuts, extra virgin olive oil, chili pepper, natural aromas, and a pinch of salt, it offers a taste sensation that is typically southern.
Ground to a creamy consistency, the dried tomato and ricotta forte pesto is processed entirely in extra virgin olive oil (from the source – the same oil that we use and sell in bottles), the combination of dried tomatoes and ricotta forte (a soft and spreadable dairy product) gives the pesto a burgundy color, a particularly strong and intense flavor, while the addition of coarsely ground pine nuts and seasoned with natural aromas completes the production of a unique product.
Produced and packaged in a jar, the dried tomato and ricotta forte pesto is pasteurized and labeled; it can be stored in a cool, dry place away from sunlight for two years from the packaging date.
Once opened, it should be stored in the refrigerator with the addition of a bit of extra virgin olive oil and consumed later.
