How Our Italian Extra Virgin Olive Oil Is Made
Extra virgin olive oil is obtained exclusively by mechanical processes, without chemical treatments. This keeps the nutritional and organoleptic properties of the olives intact.
The olives are harvested at the ideal stage of ripeness, generally between October and December, when they reach the right balance between oil content and aromatic character. Harvesting is done by hand or with mechanical tools that respect the tree and the fruit.
After harvesting, the olives are taken quickly to the mill, where they must be processed within a few hours to preserve freshness and quality. Cold extraction, below 27 °C (often called “cold pressed” olive oil), helps preserve the natural polyphenols and vitamins.
The result is an extra virgin olive oil with a fruity aroma, a colour that ranges from green to golden yellow, and a balanced taste that can be milder or more intense depending on the olive varieties used.
The Olive Varieties We Use
- Coratina: a variety rich in polyphenols that gives the oil an intense flavour with slightly peppery notes.
- Cellina di Nardò: aromas of fresh grass and artichoke with a pleasant peppery note.
- Leccino: a smooth, balanced variety, ideal for those who prefer mild oils.
Extra Virgin Olive Oil: Price and Quality
The price of extra virgin olive oil depends on several factors: the quality of the olives, the production method, the harvest period and the way the oil is processed.
A good extra virgin olive oil requires great care at every stage, from growing the trees to bottling. For this reason, a price that is too low can point to a lower-quality product.
Buying Italian extra virgin olive oil online makes it easy to reach quality artisanal products and to know more clearly where the olives come from and how the oil is made.

Laurent –
Extra virgin olive oil, as we know, is one of the fundamental elements of our diet and should never be missing. The important thing is that it is of excellent quality. I have tasted Paiano delicate taste extra virgin olive oil and I have had the opportunity to use it in various preparations. It is an oil of Apulian origin, more precisely from Salento. Apulian oil is known and loved everywhere for its goodness! This is a mild oil, light, with a sweet and pleasant taste. It goes well with all preparations, excellent both eaten raw on a salad or bruschetta and as a base for various types of cooking such as sauces or meats. It is produced following the natural ripening of the olives and then they are mechanically pressed. This process allows to obtain an oil that is less acidic and therefore not aggressive in the mouth and above all does not alter the flavors of the foods seasoned with it. Its quality is certainly superior to those found in the supermarket, and consequently, its price is proportionate to its excellence. Try it and you will feel the difference!
